Best Ever Vanilla Cupcakes

There’s a reason why Magnolia’s Bakery is such a successful business. Recipes like their vanilla cupcakes are not only easy to make, but they’re quality. So rich. So fluffy. Not overwhelmingly sweet. Literally. Perfect. These cupcakes are perfect for any occasion- party, gift, banquet, whatever. And they’re very easy to dress up or dress down. You can do a zillion different things to make them fun or fancy.

So, without further hesitation:

Ingredients:

  • 1 1/2 cups self rising flour**
  • 1 1/4 cups all purpose flour
  • 1 cup (2 sticks) unsalted ¬†butter, softened
  • 2 cups white sugar
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract

Note** -you don’t have to buy self rising flour at a supermarket, you make it! 1 cup of self rising flour is: 1 cup of all purpose flour, 1/4 tsp of salt, and 1 1/2 tsp of baking powder. So for this recipe to fulfill the self-rising flour requirement, you need 1 1/2 cups of all purpose flour, 3/8 tsp of salt, and 2 1/4 tsp of baking powder

How to:

Preheat oven to 350 F. Line 24 muffin tins with cupcake liners.

In a small bowl, combine the flours and set aside. In a large bowl, cream the butter until smooth. Add the sugar gradually and beat until fluffy. Careful not to spew sugar all over your face. Add the eggs one at a time so that they are thoroughly mixed in to the batter. Add the dry ingredients in three parts, alternating with the milk and the vanilla. Scrape down the sides and all around the bowl to make sure everything is well combined- you never know when you might have huge clumps of flour lurking on the sides or the bottom. Devour  Spoon the batter into the cupcake into the cupcake liners so that each one is about 3/4 way full. Bake about 20-25 minutes until you can insert a toothpick in the middle of one and have it come out clean. Remove from oven, let cool for 15 minutes, then put them on a wire rack to let them cool completely. Note that it is super duper important to let them cool completely before icing them! Stick candy on top of them!

put toppings on them!

dye them green, scoop the inside out, stuff it with chocolate, put chocolate on top, then roll the tops in the scooped out cupcake crumbs!

or just enjoy without all the fancy-shmancy decorations. That works too.
